Crema Catalana (City’super)

Ingredients (Serve 4):
1. 450ml milk
2. 1 cinnamon stick
3. rind of 1 lemon
4. 1 tsp vanilla extract
5. 4 medium egg yolks
6. 1 tbsp cornflour
7. 200g caster sugar

Method:
1. In saucepan, bring milk, cinnamon stick, lemon rind & vanilla extract to boil. Simmer for several minutes, them discard cinnamon stick & lemon rind. Set aside.
2. In bowl, whisk egg yolk together with cornflour & 150g of sugar until mixture is creamy. Pour this mixture into saucepan with milk, mixing.
3. Slowly heat mixture until thickened. Pour into four shallow heatproof serving dishes, let cool, refrigerate for several hours.
4. Immediately before serving, pre-heat the grill & scatter the remaining sugar evenly over each serving.
5. Grill until sugar begins to caramelize.
