紅豆吐司(HKnewsgroup o既 tomato)
材料:
1. 高筋麵粉 260g
2. 全脂牛奶 150g
3. 糖 32g
4. 鹽 1.5g
5. instant yeast 1.5g
6. 無鹽牛油 10g
7. 麵種 100g
8. 紅豆蓉 100-110g
做法:
1. Mix them all together (牛油稍遲加)and knead until ready for 1st prove
2. 1st prove usually takes 70 min. (that depends, as u know)
3. punch the air out and divide into two portion and let it rest for 15 min. 之後整形
4. 2nd prove usually takes 55 min.
5. 掃上蛋液後放入已預熱焗爐內, 190度焗35min. 然後轉至180度再焗10min
6. 出爐後再立即掃蛋液, 及放架上待涼即成.

咁我諗都ok o既. . . .. 因為o個次o岩o岩o的yeast又唔係好work . ..變o左過程中出o左o的問題我都唔知係o的yeast定係個麵種o既問題呢 .. .. . . .不過我都係加番個麵重份量出o黎先啦~~ ^.^

麵種放係下層最多一星期,放上層冰格可以雪成個月架。
好耐之前睇過某一個網話要一日發中種,放多一日就係麵種。
唔記得講麵種都幾大陣味架,要加番鹼水中和番架,加幾多就唔係好知。
